Veggie Burger in Rösti Bun

Ingredients

  • 2 Rösti Toasties
  • 100g Chickpeas
  • 100g Courgette
  • 1 Garlic
  • Breadcrumbs
  • Parsley
  • Chives
  • Powdered curry
  • Salt and pepper

Preparations

Heat up a small quantity of olive oil in a large pan and fry
courgette with garlic. Crush the chickpeas to a purée and
add courgettes, herbs, powdered curry, salt and pepper
and knead to produce a homogeneous and thick mixture
(add breadcrumbs if needed). Shape this mixture into a
hamburger and fry until it is golden-brown on both sides.
Cook two Rösti Toasties and place the hamburger in-between.
Serve with green salad and a fresh lemon-based salad dressing.
